Vegetarian Challenge

We challenged friend of Global Cool Rush Sawhney to try turning vegetarian for a week. Here’s his photo diary of how it went…

Day 1
Global Cool
have challenged me to turn vegetarian for a week. I can’t remember the last time I had a meal without meat. Today’s lunch (main pic) was cheese quesadillas on sundried tomato tortilla. Special thanks to Shannon McCarthy (aka Shazza) for her support. No idea how the rest of the week is gonna go.

Day 2
Starting to become more open minded about the food I am eating. I feel like turning veg is somewhat psychological.Thanks to Ed and Gabrielle for their support today. I had a simple salad with ranch dressing and fresh local cream of mushroom soup…

Day 2 Vegetarian ChallengeDay 3
Today’s lunch was very good! The absence of meat was certainly noticeable, but I don’t want to take anything away from the food I ate. I munched on Mexican rice, pinto/brown beans, and chopped summer squash, courgettes (aka Zucchini in the US) and red bell peppers. All this was topped with chopped tomatoes and shredded lettuce…

I had the delight of having two home-cooked meals today! The first meal (below left) was fried rice, plain yogurt and okra. The second (below right) was spaghetti with green pesto sauce…

Day 6 Vegetarian Challenge

Day 7
Today was the last day of being vegetarian. Unlike previous days, I didn’t crave meat. However, I have noticed that as the days passed my meals got better. Two home cooked meals today again, this time rice, cauliflower and plain yogurt, and vegetable stew (aka sambar in indian), spinach, puffed rice and okra.

Final thoughts…
A massive thanks goes out to everyone who supported me this week. You know who you are. And to those who tried to tempt me with meat – unlucky! And thanks for the challenge Global Cool!
